Pumpkin Recipes

Pumpkin Chocolate Chip Muffins

Makes 12-18 muffins.
Chocolate Chips Optional

Ingredients:
3/4 cup brown sugar
1/4 cup vegetable oil or applesauce
2 eggs
3/4 cup canned pumpkin
1/4 cup water
1.5 cups flour
3/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp ground cloves
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp salt
1/2-1 cup semisweet chocolate chips (optional)

Preheat the oven to 350 degrees. Grease and flour (or use muffin/cupcake liners) muffin pans.
Mix sugar, oil, and eggs in medium bowl. Add in the pumpkin and the water.
In a separate bowl, mix together the flour, baking powder, baking soda, cloves, cinnamon, nutmeg, and salt.
Add dry ingredients to wet ingredients.
Stir in chocolate chips.
Fill muffin cups 2/3 full with batter.
Bake for 20-25 minutes.
Note: Tastes even better the 2nd day!
